Cajun Crawfish Corn Bread

As I told a gentleman that was opening up a Cajun restaurant here we use cornbread as a bread to accompany most meals specially with gumbo. This is a variation of your basic cornbread.
             (Prep time: 10 minutes   Cooking time: 55 minutes   Serves: 12)

Ingredients:
2 cup Corn Meal
1 tablespoon Salt
1 teaspoon Baking Soda
6 Whole Eggs
2 Whole Chopped Onions
1/2 cup Jalapeno Peppers
16 1/3 cup Cheddar (Sharp)
1/3 cup Oil
2 pound Crawfish tails
2 can Corn (Creamstyle)
Directions:
In a large mixing bowl, combine corn meal, salt, and soda.
In a medium bowl, beat eggs thoroughly.
Add onions, peppers, cheese, oil, corn, and crawfish to beaten eggs.
Pour into corn meal mixture and mix well.
Pour into 12 x 14 inch baking dish coated with cooking spray.
Bake at 375 degrees for 55 minutes or until golden brown.
